This 'toddy' organic coconut vinegar naturally produces 'the mother', a substance that contains live probiotics, enzymes and other health promoting cofactors. Coconut vinegar, like apple cider vinegar, is very acidic but turns alkaline in the body.
Our organic coconut vinegar is unique in that most others have been made from the water of the mature coconut. Our vinegar has been made from the highly nutrient rich sap of the coconut tree, that is, the coconut nectar. This sap has a low glycemic index (GI 35), is an abundant source of amino acids, minerals, vitamin C, broad spectrum B vitamins and has a nearly neutral PH.
Vinegar made from coconut nectar is naturally aged for 8 months to one year, with no other addition or alteration, thereby fully retaining and even enhancing it's nutrient-rich properties as it forms its own 'mother'.
